Caesar Salad Dressing

This is a super quick, easy and delicious caesar dressing. I like to make it with a lot of garlic. The lemon helps balance out the flavors and provides a brightness to the salad.

Equipment

  • Immersion Blender

Ingredients
  

  • 4 Cloves Garlic - Skin removed
  • 3 Tbl Greek Yogurt - Plain
  • 2 Tbl Parmesan Cheese - Grated Fine
  • 1 Tbl Dijon Mustard - Use High Quality Mustard
  • 2 Tsp Red Wine Vinegar
  • 4 Anchovy Fillets
  • ¼ tsp Salt
  • ¼ tsp Pepper
  • ½ Lemon - Juice Only
  • ½ C Olive Oil - Use High Quality EVOO

Instructions
 

  • Add all ingredients to a container and use your immersion blender to mix. I made a double batch - hence why the container is so full !
  • Alternately use a food processor or mince the garlic and anchovies finely and use a whisk and stir thoroughly.

Notes

Lemon:  Use a medium sized lemon and if it's really juicy only use part of the juice.  Taste the dressing before adding more lemon juice.  
Anchovies:  If you get the small TJ's containers - you can make a double batch and use the whole container of anchovies.  I also use the Olive oil from the anchovies as part of my 1/2 C of olive oil - as to not waste the flavored oil that the anchovies have been sitting in...
