Creamy Balsamic Salad Dressing

Where did this salad dressing come from?

Long ago – when we were living in Chicago – I’d bought a salad dressing from Mariano’s that was Ken’s Creamy Balsamic Salad Dressing. I loved it. We ate it all up and I went looking for more and could not find it. So… I went to the great recipe box in the sky…and searched and searched and found this recipe on a blog : My Life as a Mrs.

It worked! This salad dressing is a great replication of the Ken’s salad dressing and as such has become a staple in our house. Little bit creamy with a zing from the balsamic. I have a container of morton’s nature seasoning and this is the ONLY recipe I use that for. Go figure…

Get a jar, a tupperware, anything that seals tightly and mix your self some of this! No preservatives, no additives – nothing you don’t recognize… (except maybe what’s in the mayonnaise – but come-on you literally can’t have it all.)

What to have with creamy balsamic salad dressing?

Make a big ol’ salad. Let me suggest: Arugula, Toasted walnuts or toasted pecans, goat cheese, pear and creamy balsamic dressing. You will EAT THIS UP!

OOoooh – what about adding a lil bit of roasted chicken and then you have a whole meal?

Oooohhh – what about adding home made croutons ???? Have you tried that yet?

Is it Autumn ? Do you have access to any pomegranates? That would be an awesome add – contrasting the sweet pomegranate seeds with the zing of balsamic? And then the tang of the goat cheese? yeah. Salads can literally be E-V-E-R-Y-T-H-I-N-G.

This recipe makes a about 2 Cups of Dressing :

In the ingredients you will see 3/4 C Olive oil + 1/2 C Vinegar plus the other ingredients. Realize you are going to have a lot of salad dressing to get through / share with your family.

You may wish to cut the recipe in half (see the button below) the first time you make it. Then, after that – you will be sure whether or not you and the family can consume it quickly enough. I typically keep the dressing in my fridge till it’s gone as sometimes we get on big salad kicks. The garlic is the only component that would cause me concern with keeping it in the fridge for more than a week or two. I’m sure the FDA / USDA would say less than a week for proper storage…

Creamy Balsamic Salad Dressing

An awesome salad dressing to have in your fridge and add to any greens, toasted nuts, tangy cheese and a fruit. Add some roasted chicken and you have an entire meal.

Ingredients
  

  • 4 Cloves Garlic – Grated
  • 3 Tbl Mayonnaise
  • 2 Tbl Lemon Juice – fresh
  • 1 Tbl Dijon Mustard
  • 1 Tbl Sugar
  • 2 Tsp Morton's Nature's Seasoning
  • Tsp Salt
  • ½ C Balsamic Vinegar
  • ¾ C Extra Virgin Olive Oil

Instructions
 

  • Mix all together in a jar, a sealed tupperware or other container with a tight fitting lid.

  • Serve on your favorite salad.
  • Can be stored in your fridge about a week. (or maybe two)

I said this will serve 14 people.  It’s about 1 3/4 C of dressing.
