
I’m always on the lookout for easy, flavorful recipes that are perfect for gatherings or a simple weeknight meal. Recently, my friend Eddie shared a recipe he got from his friend Deb. This recipe has become a favorite in our house: Eddie’s Cowboy Caviar. Don’t let the name mislead you – this southwestern dish is a colorful and refreshing mix of vegetables and beans that is incredibly versatile.
Where did the name Cowboy Caviar come from?
Cowboy Caviar originated in Texas…hence the cowboy reference. The “caviar” part is a bit of a tongue-in-cheek comparison to the delicacy (think about the eyes on the black eyed peas), but also highlights the dish’s vibrant colors and the way its small, distinct ingredients burst with flavor in your mouth (due to the vinaigrette). The dish originated with Helen Corbitt, who was the food director at Neiman Marcus, in Dallas, Texas. Helen first served Cowboy Caviar at the Houston Country Club on NYE in 1940. Therefore, this dish has been around in many forms since.
Originally, the combination of beans (black eyed peas and/or black beans), corn, and other fresh vegetables were readily available in Texas and easily prepared, making it a popular dish for gatherings and barbecues.
Many variations of this recipe exists. There was even a recent viral TikTok cowboy caviar recipe going around… (Although I didn’t see it because clearly, I’m not that hip… 😂)
Lastly, cowboy caviar is believed to bring luck, especially on New Year’s Day (if you make it with the signature black eyed peas!). It’s amazing the things you learn when you research a dish and its history! Black Eyed Peas are known for good luck and prosperity in the south, when eaten on New Years Day. This tradition goes back to the civil war when the union army confiscated crops and wildlife but for some reason, left the black eyed peas. Those black eyed peas helped feed the confederate families and became known for luck, resilience and prosperity in the south.
Enough of the history! Let’s talk about why this dish is so versatile and delicious.

- Adjust the Zing: You can add more vinegar/oil to your dish if you feel like you’d enjoy more of a pucker factor with your caviar.
- Prepare Ahead: You should prepare the mixture ahead of time, but add the avocado just before serving (if you choose to include it.)
- Ingredient Additions: Experiment with adding bell peppers, cucumbers, or other favorite vegetables.
- Protein Options: Enhance the dish by adding grilled chicken or shrimp.

Eddies Cowboy Caviar
Equipment
- Big Bowl – Really, a Big One!
Ingredients
Caviar Components
- 15 oz Black Eyed Peas – Can Drained & Rinsed
- 15 oz Black Beans – Can Drained & Rinsed
- 3 ears Corn – About 2 Cups of Corn
- 2 large Tomatoes – De-Seeded and Chopped
- 3 small Jalapeños – De-Seeded and Minced
- 1 small Purple Onion – Chopped
- 4 Tbl Lime Juice – Fresh
- ¼ C Cilantro – Chopped
- 1 Sweet Pepper – OPTIONAL : Red, Green, or Yellow – Chopped
Dressing
- 2 Tbl Extra Virgin Olive Oil
- 1 Tbl Red Wine Vinegar
- 1 tsp Salt
Before Serving Add (Also Optional)
- 3 Avocado – Chopped and Stirred In
Instructions
- Clean and Prepare all the Vegetables. If you are lucky to have fresh corn, dehusk & clean silk, wrap each cob with a slightly wet paper towel and microwave for 1 minute per cob. Let cool before cutting the kernels off the cob. Otherwise – canned or frozen corn will do.
- Rinse and Drain the Beans.
- Combine Beans and Vegetables in a big bowl.
- Make the dressing in a bowl, jar or other container – shake or whisk well.
- Pour the dressing over the vegetables and combine. Taste and update / add ingredients or dressing as needed.
- Let the "caviar" sit in the fridge for a minimum of 1 hour before serving.
- Just before serving, prepare the avocado and add to the vegetables and stir.
Eddie’s Cowboy Caviar is a crowd pleaser! It’s great fresh, and delicious the next day after the flavors meld. If I had a cowboy hat, I’d tip it to Eddie and to you!
