This recipe came from my old “blog” postings on Facebook from a few years ago. As always, dieting and trying to eat more vegetables and this was the second deconstructed egg roll recipe that I found. And let me tell you – this recipe comes from the fresh and frugal cookbook. (LOL – maybe THAT should have been the name of my blog ?) Anyway – truly I found the recipe on the internet and of course changed it up – some and let me say – we are keeping this one – Just as written below.
A bit of a story before we cook. I’m pretty frugal. I mean I like fancy things now and again – but eight out of ten times I’m the frugal gal saving up for that fancy thing later.
Something that I just love (weird, I know…) is going to the grocery – buying a TON of stuff on sale – and coming home with a plan to make 5-10 different meals and have the bill be $120. I could burn through $120 in one decent meal out with the hubster…couple of glasses of wine, share an app and two dinners + tip – and boom. $120 gone. Obviously spending $120 on even 7 meals is a WIN WIN WIN !!! I have a well stocked pantry to help everything along (which is key) – but if you shop on sale and plan, you can eat like a king / queen very inexpensively.
Anyway – back to this eggroll… So – Jennie O turkey was on sale – $2.49 for a lb. Buy two – toss one in the freezer and have one for dinner. My CSA Farmer had been giving me cabbages, again… I think I may have drowned in the kale and cabbages during covid – but THIS recipe is the winner. Hubster doesn’t really “rate” my food so I have to listen carefully when I ask him how is it. It’s fine or it’s good is – well, ok, I guess…
But when he says – “this is really good, I could eat this every week” you know you are onto something.
Super excited. And it uses cabbage (yeah!) and we barely got 3 servings out of it – so make a double batch if you have a crew to feed.
Deconstructed Egg Rolls
Equipment
- Large Saute Pan with a lid
Ingredients
Clean and Chop Vegetables
- 16 oz Cabbage. You could substitute a package of pre-chopped cabbage if that’s easier for you. I used maybe 1/2 – 2/3 of a head of cabbage, thinly sliced, then chopped a bit.
- 5-6 Carrots Julienned – I used my fancy pants peeler that does the julienning – is that a word? You could also buy carrots already julienned.
- 1 Onion diced
- 3-4 Green onions diced
- 2-3 tsp Ginger freshly grated
- 3-4 cloves Garlic minced
- .5 Red Pepper Consider what other veg you have in the drawer that can readily go into this meal?
Measure Sauce Components
- 1/4 cup chicken broth
- 1/3 cup Soy sauce
- 1-3 tsp Hot chili garlic sauce sambal olek or similar
Other
- 1 lb Ground Turkey or ground chicken or ground beef
- 1 tbl Avocado oil
- 2 tsp Sesame oil
Instructions
- Clean and chop the vegetables, including the garlic and ginger.
- Add some oil to a large saute pan that has a lid and add a couple of tsp of sesame oil for flavor. Saute the onion – for a couple of minutes – then add the garlic and saute a minute or two till fragrant.
- Add the turkey and some S&P and brown. Easy on the salt – you are adding soy later… (you can see I added some red pepper too!)
- Once the turkey is done – add in the liquid (broth + soy) and the ginger and stir a bit. Then add in the cabbage / carrot. Toss it all around. I put the lid on the pan for – about 2 minutes. Minimum amount of time – the point is to soften the cabbage, make it warm – but still have a slight crunch to it. Obviously this is total preference here – what kind of bite / chew do you want – but my recommendation is just a minute or two with the lid and then toss a bit more and then taste. If you want the cabbage / carrots cooked more – back on goes the lid…
- Right at the end – I dolloped in the garlic hot chile sauce and stirred that up. Top with the green onions and serve.
- I figured that we ate about 1/3 of this each. 1/3 lb of ground Turkey is 170 calories or so – add a ton of veg and some soy… Really you probably could eat the whole pan for dinner and still lose weight.
- We are definitely having this again next week. No doubt about it.
- And, the total cost of this dinner comes in at like $5.00 Total.
