Avocado Cilantro Lime Dip, Sauce or Salad Dressing

Ok people – if you enjoy Mexican food – this is something you need to get ingredients for and make next time you are eating Mexican food. Avocado Cilantro Lime Dip, Sauce or Salad Dressing can do so many things for you. This recipe as a sauce can be a dollop on top of a fish taco or a beef enchilada. This recipe, nice and thick, can be served as a side dish for snacking (appetizers). This recipe can be thinned out (or left thick) and used as a type of salad dressing. The uses for this recipe and dip / sauce / dressing are only left up to your imagination.

This Recipe is Super Flexible

There are a handful of ingredients and you can change them up based on your / your families preferences. If you like a TON of cilantro – then add it. If you like less, only use 1/4C. If you want more tang – via lime juice – use 1.5 limes, else just use one lime’s worth of juice.

Creaminess:

The creamy part of this dip / dressing / sauce – comes from either sour cream or plain yogurt. I almost always have low fat sour cream AND plain greek yogurt – but will use the lf sour cream 99% of the time.

Water

Water can be added to thin the dip / sauce into dressing – you can start with a couple of tablespoons and increase it up to 1/3C.

Spices

Spices – I don’t usually add spices to my dip / dressing – choosing to let the avocado, lime and cilantro to do all the ‘work’ but I saw a few recipes, when I was researching, that had 1/4 or 1/2 tsp of cumin added.

S&P – always need more salt than you think with Avocado!

Olive Oil

Olive oil – yep – you are going to need a couple of TBL of EVOO. Some folks use just one – I added about 2, maybe 3. (Especially if you are making a dressing).

White Vinegar or Champagne Vinegar

Additional vinegar (1/2 Tsp – 1 tsp) may be needed if you want the twang of vinegar in your dressing.

Using one of my Favorite Tools Again!

My baby food processor is just the right size for this task. You can put the Avocado (in about 4-6 pieces) into the chopper, add the garlic clove, some EVOO, the sour cream (or greek yogurt) and zip up a bit. Add the cilantro – zip up some more. Check consistency, taste, add S&P… maybe other ingredients you are wanting – zip up some more and taste. When you are happy – dump contents into a bowl and serve!

Avocado Cilantro Lime Dip, Sauce or Dressing

Avocados, Cilantro and Lime is the perfect accompaniment to almost any TexMex or Mexican meal. This recipe is ultimately flexible to create what you need – whether it's a dip for chips – sitting alongside fresh salsa, or if it's a sauce that you are putting on top of an enchilada or taco – or if it's a salad dressing completing your taco salad – the options are nearly endless!

Equipment

  • Mini Food Processor

Ingredients
  

  • 1 Avocado Ripe !
  • 4 Tbl Sour Cream Sub low fat sour cream or greek yogurt if you like
  • 1-3 Tbl Olive Oil EVOO
  • 1 Clove Garlic
  • ¼ – 1 C Cilantro leaves Start with a fresh bunch of cilantro
  • 1-2 Limes Juiced (I use 1)
  • ½-1 tsp vinegar Optional – white or champagne
  • 0-5 Tbl Water Optional – depending on consistency desired
  • Salt and Pepper

Instructions
 

  • If you have a small chopper or food processor – get it out. Depending on the size of your mini food processor you may need to make the dip or sauce in two batches. Put preferred amount of all ingredients into the food processor and zip it up ! Note – you could also likely use an immersion blender if you are making dressing…
  • If you don't have a mini food processor and/or don't feel like getting out your big food processor – just mince the garlic and the cilantro leaves and smash the avocado with a fork and hand blend everything in a bowl.
  • Taste your dip / sauce / dressing and see what you think – tweak it slightly to your tastes.

Notes

Note :  Last time I made this I used : 
1 Avocado
4 big Tbl of LF Sour Cream
1 Garlic clove
3 Tbl EVOO
1 juicy lime – both halves squeezed a lot 
Heavy S&P.  
Although I was making a salad – I didn’t add the water.  It made tossing the veg / salad more complicated but I dealt with it just fine…. 
Other people have noted maybe add 1/2 tsp cumin to the mix might be nice also.
